Macadamia Nut Pesto

A twist on the Italian classic. Rich, creamy, and wonderfully versatile.

Ingredients

  • ½ cup macadamia nuts
  • 2 large handfuls fresh basil
  • 2 cloves garlic
  • ½ cup extra virgin olive oil
  • ¼ cup Parmesan (or nutritional yeast for vegan)
  • Juice of ½ lemon
  • Salt and pepper

Method

  1. Toast (optional): Lightly toast macadamias for 2–3 minutes.
  2. Blend: Pulse macadamias, basil, garlic, and lemon juice.
  3. Drizzle: Slowly pour in olive oil while processing.
  4. Season: Add Parmesan, salt, and pepper.
  5. Store: Cover surface with olive oil. Refrigerate up to a week.
