Ingredients
- 1½ cups macadamia nuts
- 1 cup caster sugar
- ½ cup golden syrup
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- ½ teaspoon bicarbonate of soda
- Sea salt flakes
Method
- Toast nuts: Roast at 160°C for 8–10 minutes.
- Cook caramel: Combine sugar, syrup, and water. Boil to 150°C (amber colour).
- Finish: Remove from heat, stir in butter, vanilla, bicarbonate of soda, and nuts.
- Spread: Pour onto lined tray, spread thin, sprinkle with salt.
- Cool and snap: Cool 30 minutes, then break into shards.
Store between layers of parchment paper for up to 2 weeks.
