Macadamia Nut Brittle

Sweet, crunchy, and wonderfully addictive. Perfect as a gift or after-dinner treat.

Ingredients

  • 1½ cups macadamia nuts
  • 1 cup caster sugar
  • ½ cup golden syrup
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon bicarbonate of soda
  • Sea salt flakes

Method

  1. Toast nuts: Roast at 160°C for 8–10 minutes.
  2. Cook caramel: Combine sugar, syrup, and water. Boil to 150°C (amber colour).
  3. Finish: Remove from heat, stir in butter, vanilla, bicarbonate of soda, and nuts.
  4. Spread: Pour onto lined tray, spread thin, sprinkle with salt.
  5. Cool and snap: Cool 30 minutes, then break into shards.

Store between layers of parchment paper for up to 2 weeks.
