Macadamia Nut Granola Protein Bars

These nutty, nourishing protein bars are packed with crunch and flavour. They're the perfect grab-and-go snack for busy days, post-workout fuel, or a wholesome lunchbox treat.

Ingredients

  • 1 cup unsalted macadamia nuts, roughly chopped
  • 1 cup rolled oats (use gluten-free if needed)
  • ½ cup protein powder (whey or plant-based)
  • ¼ cup honey or maple syrup
  • ¼ cup almond butter
  • ½ cup dried fruit
  • 2 tablespoons chia seeds or flaxseeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

  1. Prepare the dry mix: Roughly chop the macadamia nuts and combine with the oats and protein powder.
  2. Make the wet mix: Warm the almond butter and honey until smooth. Mix in vanilla and salt.
  3. Combine: Pour wet into dry and stir well. Add water if too dry.
  4. Add extras: Fold in dried fruit and seeds.
  5. Press and shape: Press into a lined baking dish firmly and evenly.
  6. Chill: Refrigerate for at least 2 hours, then slice into bars.

Store in an airtight container for up to one week at room temperature or two weeks in the fridge.
