These nutty, nourishing protein bars are packed with crunch and flavour. They're the perfect grab-and-go snack for busy days, post-workout fuel, or a wholesome lunchbox treat.
Ingredients
- 1 cup unsalted macadamia nuts, roughly chopped
- 1 cup rolled oats (use gluten-free if needed)
- ½ cup protein powder (whey or plant-based)
- ¼ cup honey or maple syrup
- ¼ cup almond butter
- ½ cup dried fruit
- 2 tablespoons chia seeds or flaxseeds
- 1 teaspoon vanilla extract
- Pinch of salt
Method
- Prepare the dry mix: Roughly chop the macadamia nuts and combine with the oats and protein powder.
- Make the wet mix: Warm the almond butter and honey until smooth. Mix in vanilla and salt.
- Combine: Pour wet into dry and stir well. Add water if too dry.
- Add extras: Fold in dried fruit and seeds.
- Press and shape: Press into a lined baking dish firmly and evenly.
- Chill: Refrigerate for at least 2 hours, then slice into bars.
Store in an airtight container for up to one week at room temperature or two weeks in the fridge.
