Macadamia Crusted Fish

A golden, crunchy macadamia crust transforms a simple fish fillet into something special.

Ingredients

  • 4 firm white fish fillets
  • 1 cup macadamia nuts, finely chopped
  • ½ cup panko breadcrumbs
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons Dijon mustard

Method

  1. Preheat: 200°C. Line a baking tray.
  2. Make crust: Combine macadamias, panko, lemon zest, parsley, and seasoning.
  3. Prepare fish: Brush fish with Dijon mustard.
  4. Coat: Press macadamia mixture onto fish.
  5. Bake: 12–15 minutes until golden and cooked through.

Serve with a squeeze of lemon, steamed greens and new potatoes. Ready in under 30 minutes.
