A golden, crunchy macadamia crust transforms a simple fish fillet into something special.
Ingredients
- 4 firm white fish fillets
- 1 cup macadamia nuts, finely chopped
- ½ cup panko breadcrumbs
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons Dijon mustard
Method
- Preheat: 200°C. Line a baking tray.
- Make crust: Combine macadamias, panko, lemon zest, parsley, and seasoning.
- Prepare fish: Brush fish with Dijon mustard.
- Coat: Press macadamia mixture onto fish.
- Bake: 12–15 minutes until golden and cooked through.
Serve with a squeeze of lemon, steamed greens and new potatoes. Ready in under 30 minutes.
