Macadamia Crusted Chicken

Tender chicken breasts with a golden, crunchy macadamia herb crust.

Ingredients

  • 4 chicken breast fillets
  • 1 cup macadamia nuts, finely chopped
  • ½ cup panko breadcrumbs
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh thyme
  • Zest of 1 lemon
  • 2 eggs, beaten
  • 2 tablespoons olive oil

Method

  1. Preheat: 190°C.
  2. Flatten: Gently flatten chicken to even thickness.
  3. Coat: Dredge in flour, dip in egg, press into macadamia mixture.
  4. Sear: Pan-fry 2 minutes each side until golden.
  5. Bake: 15–18 minutes until cooked through.

Serves 4. The crust stays crunchy even the next day.
