Tender chicken breasts with a golden, crunchy macadamia herb crust.
Ingredients
- 4 chicken breast fillets
- 1 cup macadamia nuts, finely chopped
- ½ cup panko breadcrumbs
- 2 tablespoons fresh parsley
- 1 tablespoon fresh thyme
- Zest of 1 lemon
- 2 eggs, beaten
- 2 tablespoons olive oil
Method
- Preheat: 190°C.
- Flatten: Gently flatten chicken to even thickness.
- Coat: Dredge in flour, dip in egg, press into macadamia mixture.
- Sear: Pan-fry 2 minutes each side until golden.
- Bake: 15–18 minutes until cooked through.
Serves 4. The crust stays crunchy even the next day.
