Macadamia & Banana Bread

Moist, fragrant, and packed with macadamia crunch.

Ingredients

  • 3 large ripe bananas, mashed
  • 80g unsalted butter, melted
  • 150g light brown sugar
  • 1 large egg
  • 225g plain flour
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon cinnamon
  • 100g macadamia nuts, chopped

Method

  1. Preheat: 170°C. Grease and line a loaf tin.
  2. Wet mix: Combine banana, butter, sugar, egg, and vanilla.
  3. Dry mix: Whisk flour, bicarbonate of soda, cinnamon, and salt.
  4. Combine: Fold dry into wet. Fold in two-thirds of nuts.
  5. Bake: Pour into tin, scatter remaining nuts on top. Bake 55–65 minutes.

Keeps for 3–4 days. Freezes beautifully.
