Ingredients
- 3 large ripe bananas, mashed
- 80g unsalted butter, melted
- 150g light brown sugar
- 1 large egg
- 225g plain flour
- 1 teaspoon bicarbonate of soda
- ½ teaspoon cinnamon
- 100g macadamia nuts, chopped
Method
- Preheat: 170°C. Grease and line a loaf tin.
- Wet mix: Combine banana, butter, sugar, egg, and vanilla.
- Dry mix: Whisk flour, bicarbonate of soda, cinnamon, and salt.
- Combine: Fold dry into wet. Fold in two-thirds of nuts.
- Bake: Pour into tin, scatter remaining nuts on top. Bake 55–65 minutes.
Keeps for 3–4 days. Freezes beautifully.
